At Lax Tacos, the street taco is where everything starts. Birria at Lax Tacos starts with beef marinated overnight in a blend of dried chiles — guajillo, ancho, chile de árbol — along with garlic, cumin, cloves and black pepper. It slow-cooks for hours until the meat falls apart. The rendered fat rises to the top of the consomé broth, and it’s that fat-laced broth that each tortilla gets dipped into before hitting the hot comal. Sopes and huaraches are two of the most traditional Mexican masa dishes — and both are on the Lax Tacos menu.
